I’m basically lazy and while I love to cook, especially bake as you can see, I make every effort to find the easiest possible way. One thing I like to do is to use mixes to create new, tasty but easy recipes so you will discover that several of these recipes start with a cake mix. I generally use either Duncan Hines or Betty Crocker. I actually prefer the Duncan Hines if I’m just using the mix straight up (the Red Velvet is wonderful) but they are a bit smaller (only 18 cupcakes rather than the 24 you get with Betty Crocker) so if I need a bigger batch, for work or school for example. Either will do fine. I don’t think Duncan Hines makes a lemon cake, at least I’ve not found one, so the lemon cookies will need Betty Crocker. I don’t pretend to be an expert but I do have a lot of experience in the kitchen. Have fun!
